Looking for a fun way to stay caffeinated this summer? Try out this recipe for Coffee Popsicles using our Coconut Almond Delight flavored coffee and stay cool while getting a nice little caffeine boost!
Here’s how to make them!
You’ll need the following ingredients:
- Coconut Almond Delight flavored coffee – 3 to 5 tablespoons, depending on how strong you like your coffee
- Heavy Cream – 1/3 cup + 2 tablespoons
- Sugar – 2 tablespoons
First, brew up your coffee using whichever method you prefer! You’ll need about 2 cups of coffee for this recipe. We used a French Press to keep it nice and simple, but you can get bonus points (and more caffeine) if you use cold brew. If you brew your coffee hot, make sure to let it cool down for at least an hour in the fridge before using it in your popsicles.
Whisk together the 1/3 cup of heavy cream with 1 tablespoon of sugar, and then evenly divide the resulting sweet cream mixture into your popsicle molds, and freeze for about an hour or until solid.
Now, mix together 2 cups of (cool) coffee with 2 tablespoons of heavy cream and the remaining 1 tablespoon of sugar.
Make sure your coffee mixture is cool and your popsicle tips are completely frozen, and then evenly divide your coffee mixture into your popsicle molds and add popsicle sticks or the lids for your molds.
Stick those bad boys in the freezer for about 6 hours, or until they are completely frozen.
Although we used Coconut Almond Delight in this recipe, any of our Summer Favorites would be awesome as a sweet, frozen treat! You might also try adding a couple of extra tablespoons of sugar into your coffee mixture if you want them a little sweeter!
